Whole Food, Plant-Based Recipe Zesty Falafel Wrap

Ingredients

  • 1 cup cooked chickpeas

  • ¼ cup hemp seeds
  • 2 T ground flaxseed
  • 1 tsp cumin
  • 1 tsp coriander
  • ¼ cup fresh parsley, chopped
  • ¼ cup red onion, finely diced
  • 2 whole-grain wraps
  • 1 cup mixed greens
  • ½ cucumber, sliced
  • ¼ cup hummus (no added oil)

Instructions

1. Mash chickpeas and mix with hemp seeds, flaxseed, spices, and parsley.
2. Warm the wraps and spread hummus.
3. Add mixed greens, cucumber, onion, and falafel mixture. Wrap and enjoy.
