Whole Food, Plant-Based Recipe Wild Rice Salad

Ingredients
1 cup raw wild rice
- 1 orange, juiced
- ½ cup purple grapes, sliced in half, or other fresh or dried fruit
- ½ cup pecan pieces
- 1 tsp Dijon mustard
- 1 tsp dried chives
Instructions
1. The raw wild rice can be soaked overnight in water before cooking to release more nutrients, or just cooked from raw.
2. The wild rice can be cooked in a rice cooker or in a pot on top of the stove with the overnight soaking water that should smell sweetly fermented, or with fresh water at a ratio of 1 part rice to 2 parts water. Cook for 20 minutes or until tender and the water is absorbed.
3. To a large bowl, add the cooked wild rice and all the other ingredients. Give it a good stir to mix well.
