Whole Food, Plant-Based Recipe Vegan Mac and Cheese Sauce
Recipe courtesy of Karen Stern, PPMNY Westchester OrganizerSuch a great and healthy version of mac and cheese, which is loved by most. Pour over any type of whole grain or legume pasta.
Ingredients
½ cup raw cashews*
- 1 cup carrots, boiled or steamed
- ¼ cup nutritional yeast**
- 1 tsp apple cider vinegar
- ½ cup water
- ¼ tsp onion powder
- ½ tsp salt (optional)
- 3 servings of pasta, any type***
Instructions
1. Combine all ingredients in a Vitamix and blend at least one minute until creamy.
2. Pour sauce over the desired amount of pasta and enjoy.
Chef's Notes
*Soak and refrigerate raw cashews overnight and then drain if not using a high-speed blender.
**Nutritional yeast may bother people with Crohn’s disease and some other gastrointestinal conditions.
***Consider pouring over veggies instead of pasta, or using as a dipping sauce.
