Whole Food, Plant-Based Recipe Traditional Andalusian Gazpacho

When summer arrives, one of the best ways to eat more vegetables is to enjoy them fresh. Gazpacho is a traditional Spanish recipe that combines simple ingredients to create a cold soup that is refreshing, flavorful, and full of vibrant taste.

Ingredients

  • 2 lbs (1 kg) very ripe tomatoes

  • 1 medium cucumber, partially peeled
  • 1 red bell pepper
  • ¼ small red onion (optional)
  • 2 cloves garlic
  • 1 slice day-old baguette bread (optional, for a more traditional texture)
  • 2 tablespoons red wine vinegar
  • ¼ cup very cold water, plus more if needed
  • Salt and pepper to taste

Instructions

1. Wash and chop all the vegetables.
2. If using the bread, soak it in water for a few minutes.
3. Place all the ingredients in a blender.
4. Blend until smooth and creamy.
5. Adjust the water, vinegar, and salt to your preference.
6. Refrigerate for at least one hour before serving.
7. Serve with any of the following toppings: diced cucumber, diced tomatoes, chopped bell pepper, chopped onion, whole-grain croutons, or roasted chickpeas.

Chef's Notes

• To make it a complete meal, serve with a chickpea or white bean salad and a slice of sourdough bread.
• Optional add-ins:
½ cup watermelon: Adds sweetness and freshness without overpowering the flavor.
2–3 ripe strawberries: Enhances the tomato flavor.
Fresh basil: Adds an incredible aroma and fresh herbal note.
