Whole Food, Plant-Based Recipe Thick & Hearty Fennel Detox Soup

This fennel soup is super nutritious and easy on the gut, yet packed with flavor. Fennel is a high fiber vegetable and promotes bone health, is good for blood pressure, helps prevent cancer and aids digestion, among other benefits.

Ingredients

  • 2 cups fennel stalks or bulb, chopped

  • 1 cup cauliflower rice, fresh or frozen
  • 1¼ cup butternut squash
  • ½ cup apple, peeled and chopped
  • 1 T fresh sage leave, chopped
  • 10 cashews (approx. 2 T)
  • 2 T hemp seed hearts
  • 1 cup soy milk (or other unflavored plant milk)
  • 1 cup water (or vegetable broth)
  • ½ tsp salt (or more, to taste)
  • 1 tsp balsamic vinegar
  • Pepper (optional)

Instructions

1. Sauté fennel with water until tender, about 15 minutes.
2. Add the sage and all other ingredients to the pot.
3. Simmer for about 15-20 minutes until the apples are cooked and soft.
4. Place all ingredients into a blender and fully purée until smooth. Add more water (or stock) to get to your desired thickness (I like mine thick)
5. Taste and add more salt or other seasoning to taste.

Chef's Notes

For presentation you can top with some crushed pistachios, fennel fronds and balsamic.
