Whole Food, Plant-Based Recipe Spicy Collard Greens

2 lb collard greens ribbons
- 8 cloves garlic, minced
- 1 medium onion, diced
- 1 tsp smoked paprika
- 1 tsp pepper flakes
- ¼ tsp black pepper
- 2 cups water
Instructions
1. Wash collard greens well in lukewarm water. Use scrubbing motion with hand to remove dirt. Remove any brown spots or blemishes, and discard discolored leaves.
2. Cut off the stems. (You can use them separately to make stock). Stack 5 or 6 leaves, roll the greens as tightly as possible, and slice them to make ribbons.
3. Put a large sauce pan on the stove at medium heat. Add diced onion, letting it cook for 3 minutes. Add 1⁄2 cup water, pepper flakes, smoked paprika, and garlic. Sauté for few minutes.
4. Add collard greens to the pan in a bunch, stirring occasionally to cook it down. Add remaining greens and water. Cover pot to steam. Stir occasionally until they reach desired texture for 20 minutes or more.
5. Taste the greens and adjust flavor with more spice if preferred. Add black pepper as the last ingredient.
6. Serve and garnish with a slice of lemon.
