Whole Food, Plant-Based Recipe Southwest Tofu Scramble

Ingredients

  • 1 block of medium-firm tofu

  • Bell peppers of any color
  • Heirloom tomatoes
  • ½ red onion
  • Kale, de-ribbed and chopped
  • 2 T sofrito seasoning
  • 1 T tomato paste
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp turmeric powder
  • 2 T nutritional yeast

Instructions

1. Heat a pan over medium heat. Add the chopped peppers and onion. You can add fresh garlic if your sofrito does not contain a lot of garlic.
2. Sauté the above ingredients dry, or in a small amount of water, until they slightly soften.
3. Crumble the tofu with your hands into the pan. Add the dry seasonings and mix. Depending on how much tofu you put into the pan, you might have to adjust the amount of seasoning.
