Whole Food, Plant-Based Recipe Silky White Bean Alfredo Sauce (or Dip)

This sauce comes together in minutes and makes a simple quick meal or appetizer.

Ingredients

  • 1 can white beans (or 1½ cups cooked)

  • 2 cloves of garlic
  • 3 T nutritional yeast
  • Juice of ½ lemon
  • Splash of plant-based milk or water (to thin)
  • 1 tsp salt-free seasoning (or onion powder, pepper, and Italian herbs)

Instructions

1. Place all ingredients in a blender. Blend for 1-2 minutes.
2. Scrape down the sides of the blender. Adjust seasoning to taste.
3. Blend again for 10 seconds.
4. Pour over cooked pasta, steamed broccoli, or mixed vegetables, or chill for 1 hour and serve as a dip with sliced raw vegetables.

Chef's Notes

Add more water or plant-based milk as needed. If desired, add a handful of baby spinach to the blender and blend until smooth and silky.
