Whole Food, Plant-Based Recipe Sesame Seed Candy

Ingredients

  • ½ cup date (or maple syrup)

  • 1 cup raw sesame seeds

Instructions

1. Prepare the baking sheet: Line a baking sheet or a square pan with parchment paper.
2. Toast the sesame seeds: Heat a skillet over medium heat. Add the sesame seeds and toast them for 2-3 minutes, stirring frequently, until golden and aromatic. Be careful not to burn them. Set aside.
3. Prepare the sweetener: I chose to use date syrup, which is quite thick for this recipe. I recommend slightly thinning it out in a separate sauce pan by adding ¼ cup of water one tablespoon at a time, as needed.
4. Add the sweetener: Combine the date syrup into the pan with the seeds. Let it bubble gently for 3-4 minutes, stirring occasionally, until it thickens slightly. Then turn the heat to low and continue stirring frequently for another 1-3 minutes until it becomes a thick, sticky mixture.
5. Let cool: Remove the pan from the heat and pour the mixture onto the pan, spreading it out evenly, about 1" thick. Let cool at room temperature for a few hours until it's firmed up or pop in the fridge for an hour or so. Then remove it from the fridge and slice them into pieces.
