Whole Food, Plant-Based Recipe Orange Walnut Cookies

Bring the flavor and the crunch with this orange-infused cookie. A fan-favorite during the holidays!

Ingredients

  • 1½ cups oat flour

  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chopped walnuts
  • ½ cup monkfruit sweetener
  • ½ cup smooth, unsweetened applesauce
  • ¼ cup almond butter
  • 1 T freshly grated orange zest
  • 4 T orange juice

Instructions

1. Whisk flour, baking powder, baking soda and salt in a large bowl. Stir in walnuts.
2. Whisk the monkfruit sweetener, applesauce, almond butter, orange zest and juice in a medium bowl until smooth. Make a well in the dry ingredients and pour in the wet ingredients. Mix until well blended. Cover with plastic wrap and chill for 30 minutes.
3. Preheat the oven to 350ºF. Line a baking sheet with parchment paper or a nonstick baking mat.
4. Once the dough has been chilled, it will firm up but still be fairly wet and sticky. Run two spoons under cold water and then lightly dust them with flour. With the first spoon, scoop out enough dough for a 1½ inch ball. Use the second spoon to scrape the dough off the first, onto the baking sheet. Place 2 inches apart.
5. Bake the cookies until barely golden brown for 12 to 15 minutes. Cool on the pan for 1 minute. Then transfer to a wire rack to cool completely.
