Whole Food, Plant-Based Recipe Oil-Free Tofu Scramble with Black Beans

Ingredients
14-oz firm tofu block, crumbled
- 1 cup cooked black beans
- ½ onion, diced
- 1 bell pepper, diced
- 2 cups baby spinach or kale
- 2 plum tomatoes, diced
- ¼ tsp turmeric
- ¼ tsp black pepper
- ¼ tsp smoked paprika
- 1 T nutritional yeast
- 1 T tahini (optional)
- 1 scallion, diced (optional)
Instructions
1. In a large non-stick pan, water-sauté onion and bell pepper until softened.
2. Add crumbled tofu and spices, stirring well. Cook for 5-7 minutes.
3. Stir in black beans, tomatoes, and spinach. Cook until spinach wilts.
4. Sprinkle nutritional yeast, scallions, and optional tahini for creaminess. Serve warm.
