Whole Food, Plant-Based Recipe Oat Pancakes

Ingredients
1½ cups of whole oat flour*
- 1½ cups of almond milk
- 1 tsp of maple syrup (or substitute with ripe bananas)
- 1 tsp of vanilla extract
- 2 tsp of baking powder
Instructions
1. In a bowl, mix the milk, maple syrup, and vanilla until well combined.
2. Add the oat flour and baking powder and mix until smooth. Let the mixture rest for 2 minutes.
3. Heat a skillet over medium heat. Once hot, pour ¼ cup of the pancake batter onto it.
4. Cook until the pancake has bubbles on top and the edges are slightly dry (approximately 2–3 minutes per side). Flip and cook for another 2–3 minutes.
5. Serve with fresh fruit or fruit sauce as a topping.

*You can make your own by grinding whole oats in a food processor.
