Whole Food, Plant-Based Recipe Nutty Cocoa Nibbles

These “nibbles” are super simple and really fun for kids to make. You can roll them through cocoa powder, smoked chipotle or paprika, coconut flakes, or whatever you can come up with.

Ingredients

  • 1 cup raw almonds

  • 8 pitted dates
  • 2 T + 1 tsp cocoa powder
  • ¼ cup nut butter

Optional toppings / finishing-spices
  • Cocoa powder

  • Smoked chipotle
  • Shredded coconut
  • Sesame seeds

Instructions

1. In a food processor or strong blender, process the almonds into a meal. (Blending them for longer will turn them into a nut butter, which we do not want for this recipe.)
2. Add all other ingredients and process until they stick together like clay.
3. Grab a lump of the cocoa “clay,” about 1-2 inches in diameter, and roll it into a ball.
4. Optional: Place the toppings/spices of your choice — cocoa powder, smoked chipotle, etc — into small bowls and roll the cocoa balls into it. Tap off any excess powder or flakes.
5. Serve.
