Whole Food, Plant-Based Recipe No-Bake Brownie Bites

Ingredients
1½ cups pitted dates
- ½ cup raisins
- 1 cup rolled oats
- 2 T pumpkin seeds
- ¼ cup cocoa or cacao powder
- 1 tsp pure vanilla extract
- 3 T non-dairy chocolate chips (optional)
Ground pistachios and ground freeze-dried raspberries or beet powder
Instructions
1. In a food processor, combine the dates, raisins, oats, and pumpkin seeds. Process until the mixture is crumbly.
2. Add the cocoa powder and vanilla. Process again, and let the processor run until the mixture begins to get sticky and form clumps.
3. Add the chocolate chips (if using) and pulse until a ball forms on the blade.
4. Remove the bowl and roll small scoops (slightly less than 1 T each) of the mixture into balls.
5. Continue until all of the mixture is used.
6. Roll half the balls in ground pistachios and the other half in ground raspberry powder.
7. Transfer to an airtight container in the refrigerator, where they will keep for a couple of weeks, or to the freezer, where they will keep for a couple of months.
8. Note that these are addictive...be sure to make small balls and remember that 1 ball is a serving!
Chef's Notes
• Note that cacao is made from raw beans, and cocoa powder is made from beans that have been roasted. Cacao contains more antioxidants and is therefore more nutritious.
• Other ideas: Roll balls in cocoa/cacao powder, ground coconut flakes, ground freeze-dried blueberries, or black and white sesame seeds. Use your imagination. The possibilities are infinite!
