Whole Food, Plant-Based Recipe Mashed Potatoes

Ingredients
2 lbs. potatoes (yukon gold or russet), peeled, cut into large chunks
- ¼ cup unsweetened plant-based milk + some of the reserved potato water
- 1-2 cloves garlic, minced
- 1 tsp miso paste
- 1 tsp mustard
- Black pepper to taste
Instructions
1. Add the potatoes to a large pot and fill with water several inches above the potatoes. Bring to a boil. Cook the potatoes until they are completely tender, approximately 15-20 minutes.
2. Drain potatoes, and save the cooking water!
3. In the pot you cooked potatoes in, sauté the garlic in some of the reserved cooking water over low heat before you add back the drained potatoes.
4. Mash the potatoes using a potato masher or wooden spoon until completely mashed.
5. Slowly add plant-based milk, miso, mustard, and black pepper. Adjust taste if necessary.
