Whole Food, Plant-Based Recipe Maple-Glazed Cauliflower Wings

Ingredients

  • ½ cup all-purpose flour

  • ¼ tsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • 1 head of cauliflower (separate and cut into florets)
  • ¼ cup maple syrup
  • ¼ coconut cream (optional)
  • 1-2 habaneros, sliced (remove seeds for milder taste)
  • 1 dash ground black pepper
  • 1 clove fresh garlic, minced
  • 2 whole carrots, peeled and cut into sticks
  • 2 celery ribs, peeled and cut into sticks

Instructions

1. In a small bowl, mix together the flour, paprika, cayenne pepper and salt.
2. Place cauliflower florets in a large nonporous glass dish or bowl and sprinkle flour mixture over them until evenly coated.
3. Cover dish or bowl and refrigerate for 60 to 90 minutes.
4. Preheat oven to 450°F.
5. Combine the habaneros and garlic in a small saucepan over low heat. Stir over dry heat until peppers and garlic are fragrant.
6. Add coconut cream, if using, maple syrup, and black pepper and stir to combine.
7. Simmer for 3-5 minutes, stirring frequently. Remove from heat and reserve for serving.
8. Bake coated wings in oven for 20 to 25 minutes on parchment paper or a non-stick baking sheet until crisp.
9. While wings are roasting, peel and cut celery and carrots into sticks.
10. Remove wings from oven and place into serving bowl. Add maple mixture and stir together.
11. Serve immediately with vegetable sticks.
