Whole Food, Plant-Based Recipe Mango Salsa

Mango makes everything taste great! This mango salsa is so tasty. Use it as a dip or atop tacos or other savory dishes.

Ingredients

  • 1 mango (any type), diced

  • 1 small cucumber, diced
  • ⅓ red onion, or 2 scallions
  • ½ cup peppers, diced
  • ½ cup cilantro, chopped
  • ½ lime juice
  • A couple dashes of any of these spices: cayenne, aleppo powder, chili powder

Instructions

1. In a bowl, combine all ingredients.
2. Season to taste.

Chef's Notes

• For best flavor, let the salsa sit for 10 minutes or longer. This recipe makes approximately 2 cups and can easily be doubled. Salsa can stay in the fridge for several days in an airtight container.
• You can also add chopped jalapeño.
• As an alternative to fresh mango, you can use thawed frozen mango.
