Whole Food, Plant-Based Recipe Mango Lassi

Yields 4-6 servings

Ingredients

  • 2 mangoes, peeled and cut (ideally frozen)*

  • 4 dates, pitted
  • 3 T tahini
  • 1 tsp shredded carrot
  • ¼ tsp turmeric
  • A pinch of ground cardamom (note strong flavor)
  • Plant-based milk for desired consistency (optional)

Instructions

1. In a food processor or blender, combine the mangoes and dates. Blend until smooth.
2. Add the tahini, carrot, and spices. Continue to blend.
3. Add water or plant-based milk one T at a time for creamy consistency.
Alternatively, add ice for consistency, if needed.
4. Serve with a pinch of cardamom.

Chef's Notes

*If using fresh, add ¼ to ½ cup of ice.
