Whole Food, Plant-Based Recipe Instant Pot Split Pea Soup

This recipe offers a very simple approach to split pea soup that can be made quickly in the Instant Pot. You can get creative and add other vegetables or herbs you may have on hand to bring out even more flavor!

Ingredients

  • 2 cups dried split peas (green or yellow)

  • 3-5 carrots, chopped
  • 3-4 celery ribs, chopped – use the leafy parts!
  • as much onion or scallion as you want (optional)
  • as many garlic cloves as you want – we use half of a bulb (optional)
  • 1 bay leaf (optional)
  • Water, enough to rise 1-2 inches above the other ingredients

Instructions

1. Chop the vegetables and throw them in the Instant Pot.
2. Rinse the split peas in a fine mesh strainer, and pick through for any rocks or other debris. Add them to the Instant Pot with the optional bay leaf.
3. Cover with water as described in the ingredients list.
4. Use the manual pressure cook setting on the Instant Pot and set for 12 minutes. When the pot is done, let it sit for 5-10 minutes before releasing the pressure.
5. Remove the pot from the base and fish out the bay leaf. Then, use an immersion blender to purée the soup until it's creamy.
6. Serve plain or over whole grains.

Chef's Notes

This recipe makes enough for many servings. Cut the proportions in half if you'd prefer to make less.
