Whole Food, Plant-Based Recipe Giant Oatmeal Cookie

An easy on-the-go breakfast.

Ingredients

  • 2 large ripe bananas, mashed

  • 2 T flax seeds, ground
  • 1 cup oats, old-fashioned
  • 1 cup quinoa flakes
  • ½ cup raisins
  • 1 T cinnamon
  • ½ cup walnuts, crunched into pieces

Instructions

1. Preheat the oven to 350°F, and prepare a baking pan with a nonstick sheet of silicone, parchment paper, or this black sheet that is food safe.
2. In a large bowl, mix all the ingredients together, and give it a good stir to create a batter that sticks together well.
3. Scoop a level ¼ cup of batter, and put it on the prepared baking pan. Either use plastic gloves or use your hands to press the batter into patties that have a bit of thickness to it.
4. Bake for 20 minutes. Use a spatula to flip the cookies, and bake them for another 10 minutes.

Chef's Notes

• Use 2 cups oats instead of 1 cup oats and 1 cup quinoa.
• Convert these to chocolate cookies by adding ¼ cup cocoa powder.
