Whole Food, Plant-Based Recipe Corn & Potato Chowder

Potato corn chowder is a flavorful, creamy soup loaded with nutritious vegetables. Feel free to substitute or add any array of vegetables you have on hand. This soup tastes better the day after its preparation.

Ingredients

  • 1 onion, chopped

  • 4 garlic, minced
  • 2 carrots, chopped
  • 1 pepper, chopped
  • 10 cups vegetable broth
  • Handful of fresh thyme
  • Handful of fresh parsley
  • 2 cups of chopped potatoes
  • ½ cup of kale, chopped
  • 1 bag of frozen corn, defrosted
  • ½ cup raw cashews or macadamia nuts (soak overnight for better results)
  • ¼ tsp black pepper
  • Dash of cayenne pepper (optional)
