Whole Food, Plant-Based Recipe Corn & Potato Chowder

Ingredients
1 onion, chopped
- 4 garlic, minced
- 2 carrots, chopped
- 1 pepper, chopped
- 10 cups vegetable broth
- Handful of fresh thyme
- Handful of fresh parsley
- 2 cups of chopped potatoes
- ½ cup of kale, chopped
- 1 bag of frozen corn, defrosted
- ½ cup raw cashews or macadamia nuts (soak overnight for better results)
- ¼ tsp black pepper
- Dash of cayenne pepper (optional)
