Whole Food, Plant-Based Recipe Classic Italian Dressing

This classic italian dressing is my family’s recipe made without oil. It tastes wonderful on just about any salad.

Ingredients

For dressing
  • 1½ cup cooked cannellini beans, drained and rinsed

  • ½ cup water
  • ¾ cup vinegar
  • 1 T maple syrup
  • 2 tsp onion, minced
  • 1 tsp garlic powder
  • ½ tsp garlic, minced
  • 1 tsp cashew parmesan (see below)
  • Pinch of pepper
  • Pinch of dried oregano

For parmesan
  • ¾ cup raw cashews

  • 3 T nutritional yeast
  • ½ tsp salt

Instructions

For the dressing

1. Blend beans and water until smooth.
2. Then add all ingredients to a mixing bowl and whisk together.

For the parmesan

1. Blend ingredients in a powerful blender.
2. Run mixture through a sifter and continue to blend until fine.
