Whole Food, Plant-Based Recipe Chocolate Sweet Potato Orange Pie

Try this decadent whole food, plant-based chocolate sweet potato pie with a twist of orange!

Ingredients

For pie crust
  • 2 cups raw nuts (1 cup almonds & 1 cup cashews)

  • 1½ cup pitted dates
  • ¼ cup old fashioned oats
  • 1 tsp of water

For pie filling
  • 3 cups cooked sweet potatoes

  • ¾ cup maple syrup
  • ½ cup oat flour
  • ¼ cup whole wheat flour
  • ¼ cup canned coconut milk
  • ¼ cup cacao powder
  • Zest from 1 orange
  • Juice from 1 orange

Instructions

For the crust

1. Place all ingredients in a food processor and pulse until the consistency resembles small uniformed pebbles.
2. Press into a 9 inch round baking pan. Put in the refrigerator to set the crust.

For the pie

1. Preheat the oven to 350ºF.
2. Add all ingredients in a high powered blender or food processor and process until very smooth and thick.
3. Pour the filling into the unbaked 9-inch pie crust and smooth top.
4. Cover with foil in a tent formation.
5. Bake for 45 minutes.
6. Allow it to cool for at least 2 hours. Best if chilled to slice and serve.
