Whole Food, Plant-Based Recipe Chocolate Sweet Potato Orange Pie

Ingredients
For pie crust2 cups raw nuts (1 cup almonds & 1 cup cashews)
- 1½ cup pitted dates
- ¼ cup old fashioned oats
- 1 tsp of water
3 cups cooked sweet potatoes
- ¾ cup maple syrup
- ½ cup oat flour
- ¼ cup whole wheat flour
- ¼ cup canned coconut milk
- ¼ cup cacao powder
- Zest from 1 orange
- Juice from 1 orange
Instructions
For the crust1. Place all ingredients in a food processor and pulse until the consistency resembles small uniformed pebbles.
2. Press into a 9 inch round baking pan. Put in the refrigerator to set the crust.
1. Preheat the oven to 350ºF.
2. Add all ingredients in a high powered blender or food processor and process until very smooth and thick.
3. Pour the filling into the unbaked 9-inch pie crust and smooth top.
4. Cover with foil in a tent formation.
5. Bake for 45 minutes.
6. Allow it to cool for at least 2 hours. Best if chilled to slice and serve.
