Whole Food, Plant-Based Recipe Chocolate Chia Pudding

A yummy chocolatey pudding that’s super good for you! Chia seeds are one of the best plant-based sources of omega-3 fatty acids, which have been shown to help increase “good” HDL cholesterol, decrease “bad” LDL cholesterol, reduce blood triglycerides and alleviate inflammation. This is a satisfying dessert for the entire family.

Ingredients

  • 5 pitted Medjool dates (this will be on sweet side. If you like things less sweet, reduce number of dates)

  • 2 T chia seeds
  • ½ cup soy milk (or other plant based milk)
  • 1 tsp vanilla
  • 2 T unsweetened cocoa powder
  • 2 T decaf coffee (optional for mocha flavor)

Instructions

1. Place all ingredients in a high powered blender and mix until fully smooth.
2. Place into two small cups and let set in the refrigerator.
3. Top with whatever you enjoy.
