Whole Food, Plant-Based Recipe Cannoli Cups with Chocolate Mousse

Ingredients

  • 2 avocados, peeled and pitted

  • ½ cup maple syrup
  • ½ cup cocoa powder
  • ½ cup almond milk
  • 2 T vanilla extract
  • 8-10 wonton wrappers
  • powdered sugar, optional
  • 8-10 cherries for topping

Instructions

1. Add all ingredients to your food processor and mix until smooth and consistent.
2. Keep chilled until ready to use.
3. Preheat the oven to 400° F.
4. Press the wonton wrappers into the muffin tin, smoothing the bottoms as much as possible. Spray with olive oil.
5. Bake at 400° for 8-10 minutes until golden brown.
6. Remove and immediately dust with powdered sugar.
7. After cooling, fill each with a large spoonful of mousse.
8. Top with powdered sugar and cherry.
