Whole Food, Plant-Based Recipe Butter Pecan Nice Cream
Recipe courtesy of Hilary Agin, PPMNY Community MemberIs it ever too cold for ice cream? We don’t think so. For those of you who love butter pecan ice cream, give this a try. And… pecans are the healthiest nut in the world, according to their antioxidant content.
Ingredients
5 super-ripe frozen bananas
- 3 medjool dates, pitted
- 1½ tsp vanilla
- ⅓ cup chopped pecans
Instructions
1. Peel and freeze very ripe bananas (should be browned on the outside).
2. When you are ready to make the ice cream pull them out of the freezer and put them in the high speed blender with the dates and vanilla.
3. Let the bananas thaw about 10 minutes to make it easier to blend.
4. Blend until fully smooth.
5. Once smooth, add in the pecans and pulse so they get mixed in but not fully blended. I sometimes will mix the pecans in by hand so they stay chunky.
6. Place any leftover in a container and store in the freezer.
Chef's Notes
If you freeze, please note that it will take about 10 minutes or so for the ice cream to thaw a bit so it gets creamy again.
