Whole Food, Plant-Based Recipe Black Bean Salsa

Ingredients

  • 2 cans of black beans, drained

  • A bunch of fresh cilantro
  • Juice of 2-3 limes (depending on how juicy the lime is)
  • 16-oz jar of medium green salsa
  • Any peppers, depending on your taste for hot or aromatic spice, cut finely - jalapeños, chilis, serrano, poblano
  • 15-oz can of corn (optional)
  • stalk of celery, sliced thinly (optional)

Instructions

1. Drain and rinse the beans and corn, if using.
2. Wash and chop the cilantro.
3. Add lime juice, black beans, and salsa.
4. Mix well.
5. Serve on rice cakes.

Chef's Notes

Store in fridge (this is one of those dishes that gets better the longer it marinates in the fridge!).
