Whole Food, Plant-Based Recipe Baked Sweet Plantains

They resemble bananas but they are longer in length, thicker skinned, and starchier in flavor. In many countries plantains are used more like a vegetable than a fruit. These baked plantains are easy to make and taste great.
Ingredients
1 or 2 sweet plantains, their outer skin is at least half black and half yellow, and is soft to the touch, which means that they are very sweet inside (not rotten)
Instructions
1. Preheat the oven to 350°F and prepare a baking tray topped with a nonstick sheet.
2. To open a plantain, use a knife to slice a bit into the skin and down the length of the plantain, then gently peel away the outer skin and discard it. Slice the plantain either into ½ inch discs, or down the full length of the plantain to make strips to later use as the cooked starchy layer for a lasagna, or just cut on the diagonal and make 2 inch length cuts that are about ¼ inch thick.
3. Place the cut plantain pieces on a the prepared baking tray, with space in between each disc for the air to circulate, and bake for 10 minutes. Turn each cut piece. Bake for 10 more minutes. Serve warm. They will disappear quickly.
