Whole Food, Plant-Based Recipe Baked Plantains

Several plantains: Be sure to pick ripe plantains – yellow with
- some dark brown spots, or better yet, if you want plantains that
- melt in your mouth and taste super sweet, then pick plantains
- that are nearly or fully black.
Instructions
1. Preheat the oven to 400°F.
2. Line the baking sheet with parchment paper or Silpat mat.
3. Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain, peel only as deep as the peel. Remove plantain peel by pulling back.
4. Slice plantains approximately ½” thick on an angle.
5. Place plantains on a tray and bake for about 20-30 minutes or until golden brown and tender.
