Ingredients
1 large onion, diced
- 6 cloves garlic, minced
- 1 T red pepper flakes
- 24.46 oz (or 750 g) of tomato purée (Pomi brand is nice for this recipe)
- 24.46 oz (or 750 g) of diced tomatoes (Pomi brand is nice for this recipe)
- 1 bunch fresh basil, chopped
Instructions
1. In a large pot, add the onion, garlic and red pepper flakes.
2. When the onions and garlic have softened, add the tomatoes and a bit of extra water into tomato packets to get the last drops out of each of the tomato packets.
3. Bring the filled pot to a boil.
4. Stir the basil into the tomato mixture.
5. Allow the mixture to simmer for about an hour. Stir the mixture occasionally.
6. Store in the refrigerator.
Chef's Notes
• To quickly mince the garlic, rough chop it and add it to a high speed blender. Mix for 5 seconds. Separately, do the same for the basil.
• Can freeze for later use, keep an inch free at the top of the jar as it will expand in the freezer.
• For a bolognese sauce, add minced mushrooms and black lentils.
• For a seafood sauce, add a minced sheet of nori seaweed.
