Whole Food, Plant-Based Recipe Apricot Jam
Recipe courtesy of Hilary Agin, PPMNY Community MemberThis jam recipe is so simple and delicious. It can last for quite a while in the refrigerator so perfect to have on hand. It’s great on breads but also good to sweeten sauces.
Ingredients
1 ½ cup dried apricots soaked in warm water for 15-20 min (water just covering apricots)
- ¾ cup apricot water
- 1 tsp lemon juice
- 3 T raisins
Instructions
1. Soak the apricots in water. Again, just cover them with the warm water. Once finished soaking, drain the apricots and save the water
2. Place the apricots, ¾ cup water, lemon juice and raisins in a blender and blend until fully smooth.
3. If you want your jam thinner, you can add more of the apricot water until it is at desired consistency. You can then discard the rest of the water.
Chef's Notes
If you don't eat a lot of jam, consider halfing the recipe.
