Whole Food, Plant-Based Recipe Aifra’s Power Bowl

This beautiful and tasty bowl is great for lunch or dinner any day of the week. It is packed with nutritional diversity.

Ingredients

  • Brown rice

  • Purple potatos or sweet potatos, boild or baked
  • Lentils, cooked and simply seasoned as you prefer
  • Raw zucchini, cubed
  • Sweet peppers, cubed
  • Arugula, tossed with 1 T of lemon juice or cider vinegar

For the cashew sauce
  • ½ cup raw cashews

  • ½ cup water
  • ½ red or yellow bell pepper
  • 1 T nutritional yeast
  • 1 tsp garlic powder
  • juice of half a lemon
  • pinch of salt

Instructions

1. Combine all ingredients for cashew sauce into a blender and blend until smooth. Adjust consistency to your liking. If you prefer creamy, reduce the water. If you prefer a thinner consistency, increase the water.
2. Arrange/layer all remaining ingredients in a large bowl and drizzle with the cashew sauce.
