Whole Food, Plant-Based Recipe Adzuki Bean Salad
Recipe courtesy of Hilary Agin, PPMNY Community MemberAdzuki beans are Himalayan native but now grown throughout Asia. They are a small, nearly round red bean with a thread of white along part of the seam. Adzuki beans are sweet and starchy and have a nutty/sweet flavor.
Ingredients
1 cup chopped tomato
- 1 ½ cup adzuki beans
- 1 cup cubed red peppers
- 3 cup chopped cucumber
- 2 T finely chopped shallots
- 3 T finely sliced scallions
- Juice of one lime
- Salt and pepper, to taste
- 1 T apple cider vinegar
- ¾ cup chopped fresh cilantro
Chopped fresh basil
- Chopped fresh dill
- Quinoa
Instructions
Place all ingredients in a bowl and mix together. Modify seasoning and herbs, to taste.
