Whole Food, Plant-Based Recipe Veggie Tofu Scramble

8 oz firm tofu, diced
- ¼ tsp turmeric powder
- ⅛ tsp ground black pepper
- Salt to taste
- Minimal water or vegetable broth
- 1 green onion, chopped (including white part)
- ½ red bell pepper, diced
- ½ medium carrot, diced
A slice of toasted whole grain or sprouted bread
- A side of roasted, diced potatoes
- A side of cooked, sliced mushrooms
- A bed of greens
Instructions
1. In a medium bowl, crumble the tofu into bite-sized pieces using a fork.
2. Add some water or vegetable broth to a frying pan on medium heat.
3. Add the tofu and remaining ingredients.
4. Stir until well combined and cook for 5-10 minutes, stirring occasionally.
5. Serve immediately over optional toast and top with parsley.
