Whole Food, Plant-Based Recipe Veggie Tofu Scramble

Ingredients

  • 8 oz firm tofu, diced

  • ¼ tsp turmeric powder
  • ⅛ tsp ground black pepper
  • Salt to taste
  • Minimal water or vegetable broth
  • 1 green onion, chopped (including white part)
  • ½ red bell pepper, diced
  • ½ medium carrot, diced

Optional
  • A slice of toasted whole grain or sprouted bread

  • A side of roasted, diced potatoes
  • A side of cooked, sliced mushrooms
  • A bed of greens

Instructions

1. In a medium bowl, crumble the tofu into bite-sized pieces using a fork.
2. Add some water or vegetable broth to a frying pan on medium heat.
3. Add the tofu and remaining ingredients.
4. Stir until well combined and cook for 5-10 minutes, stirring occasionally.
5. Serve immediately over optional toast and top with parsley.
