Whole Food, Plant-Based Recipe Lentil Meatloaf

Protein: ~30g per serving
Ingredients
2 cups cooked lentils
- 1 cup rolled oats
- ½ cup grated carrot
- ½ cup diced onion
- 2 T ground flaxseed mixed with 6 tbsp water
- 2 T nutritional yeast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 cup chopped mushrooms (optional)
- ¼ cup tomato paste (no added salt)
Instructions
1. Preheat the oven to 375°F (190°C).
2. Mix all ingredients well and press into a parchment-lined loaf pan.
3. Bake for 35-40 minutes until firm. Cool slightly before slicing.
