Whole Food, Plant-Based Recipe Citrus and Corn Millet with Tangerine Dressing

Get acquainted with millet! With a mild corn-like flavor and slightly sweeter profile among grains, millet is a great way to diversify your plate.

Ingredients

For base
  • 3 cups millet, cooked

  • 1 cup fresh or frozen corn
  • 1 cup fresh or frozen peas
  • ½ tangerine, peeled
  • A few sprigs of cilantro or preferred herb for garnish

For dressing
  • 5-6 tangerines, juice squeezed

  • ¼ cup vinegar
  • ¼ tsp dijon mustard
  • 1 small garlic clove, minced
  • Black pepper to taste

Instructions

For the millet

1. Rinse 1 cup of millet and strain with a fine-mesh strainer. Cook in a pot with 2 cups of water until boiling. Simmer over low heat for 15 minutes with the lid on. Remove from heat and cool for 10 minutes with the lid on. Transfer to a large bowl and fluff with a fork.
2. In a large mixing bowl, combine cooked millet, corn, and peas.
3. Transfer to a serving plate. Add tangerine pieces on top. Garnish with cilantro or preferred herb. 

For the dressing

1. Whisk together tangerine juice, vinegar, and mustard. Mix in garlic and black pepper afterwards.
2. Drizzle the dressing over the millet. Enjoy!
