Whole Food, Plant-Based Recipe Cheesy Quesadillas

Ingredients
6 sprouted corn tortillas (Ezekiel)
- ¼ cup nutritional yeast (Anthony's)
- ¼ cup almond butter (from almonds in a high speed blender)
- 1 tsp Dijon mustard
- 1 tsp miso paste
- ¼ cup water
Instructions
1. Preheat the oven to 425°F. Prepare a baking sheet with non-stick parchment paper, a silicone mat or a grill mat.
2. Place the tortillas on the baking sheet.
3. In a large bowl mix the other ingredients into a paste.
4. Use a knife to spread a thin layer of the cheesy paste onto each side of tortilla.
5. Fold two coated tortillas into a sandwich.
6. Cut each cheesy sandwich in half, then into quarters.
7. Bake for 10 minutes. Turn each quarter and bake another 10 minutes. When the tortillas are very crispy, they are done.
