Whole Food, Plant-Based Recipe Budget-Friendly Lentil Soup

Ingredients

  • Bay leaves

  • 4 celery stalks
  • 1 medium yellow onion
  • 4 carrots
  • 1 pound of lentils (mix of black, brown, red)
  • 9 oz of canned crushed tomatoes
  • 8 cups of water
  • Salt and pepper to taste

Instructions

1. Chop the onion, carrot and celery into cubes
2. In a pot, sauté the chopped ingredients for approximately 5 minutes
3. When the onion is translucent, add the bay leaves, water (8 glasses), and a little salt and pepper to taste
4. Add the lentils and cook for 25 minutes
5. Add the tomato and let everything cook for 15 more minutes
6. Serve with your favorite toppings and enjoy!
