Whole Food, Plant-Based Recipe Ribollita Soup

This soup has amazing plant diversity with 10 plants, plus all the herbs and spices. This soup will definitely do your body good and is nice and hearty. Have as a main course, snack or starter.

Chef's Notes

• To add another vegetable to this, added about 2 cups of chopped cremini or button mushrooms after sautéing the carrots, celery and onions and cook until they soften.
• For a gluten-free variation try, gluten-free rice breadcrumbs.
